WILMINGTON – Kim Schneese, whose mother owned the fourth Capriotti’s Sandwich Shop ever opened, plans to open her second Capriotti’s next spring.

Schneese, owner of the Silverside Road Capriotti’s since she took it over from her mother in 2015, will open her shop somewhere in North Wilmington.

Capriotti’s, founded in 1976, currently has more than 100 fast-casual restaurant locations across the country, and it will pen 15 new ones in 2017. It plans to grow to 500 locations by 2025.

“Kim has been an essential part of the Capriotti’s family for many years and her growth plans show her commitment to the future direction of the brand,” said David Bloom, Capriotti’s chief development officer. “
